Tender Chicken Gyros with Fresh Toppings

Ingredients

  • For the chicken:
  • 1 pound boneless skinless chicken breasts, thinly sliced against the grain
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the tzatziki:
  • 1 cup Greek yogurt
  • 1 cucumber grated
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • For serving:
  • 4 pita bread
  • 1/2 cup chopped lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • Hummus for serving

Instructions

  • Marinate the chicken: In a large bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the thinly sliced chicken and toss to coat. Cover and refrigerate for 2-4 hours, or overnight.
  • Make the tzatziki: In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, lemon juice, salt, and pepper. Stir to combine and refrigerate until ready to serve.
  • Cook the chicken: Thread the marinated chicken onto skewers. Grill or cook the skewers over medium-high heat for 15-20 minutes, or until cooked through and slightly charred.
  • Assemble the gyros: Slice the pita bread open. Fill with chopped lettuce, tomatoes, red onion, and cooked chicken.
  • Serve: Serve with tzatziki sauce and hummus.

  • Optional toppings: You can also add other toppings to your gyros, such as feta cheese, pickled red onions, or hot sauce.
