Sweet and Savory Chicken and Waffles

Ingredients

For the chicken:

  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko bread crumbs
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup maple syrup
  • 1 tablespoon Dijon mustard

For the waffles:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg

Instructions

Make the chicken:

  • In a shallow dish, combine flour, salt, and pepper. Dredge chicken breasts in the flour mixture.
  • In another shallow dish, combine beaten eggs, panko bread crumbs. Dip chicken breasts in the egg mixture, then coat with the bread crumb mixture.
  • Heat butter and olive oil in a large skillet over medium-high heat. Cook chicken breasts until golden brown on both sides and cooked through.
  • In a small bowl, combine maple syrup and Dijon mustard.
  • Drizzle maple syrup-Dijon mustard mixture over chicken breasts.

Make the waffles:

  • In a bowl, combine flour, baking powder, and salt.
  • In a separate bowl, combine milk, melted butter, and egg.
  • Add dry ingredients to wet ingredients and stir until just combined.
  • Cook waffles in a waffle iron according to manufacturer's instructions.
  • Serve: Serve chicken with waffles.
  • Enjoy!
