Sous Vide Sausage and Goat Cheese Soup

This hearty soup is a delicious and comforting meal that's easy to prepare using a sous vide cooker. The sausage and vegetables are cooked slowly in the water bath, resulting in a tender and flavorful broth. The addition of goat cheese adds a creamy and tangy element that complements the rich flavors of the soup.

Ingredients

  • 1 pound Italian sausage casings removed
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 quart chicken broth
  • 1 can 14.5 oz diced tomatoes, undrained
  • 1/2 cup white wine
  • 1/4 cup heavy cream
  • 1/2 cup crumbled goat cheese
  • Salt and pepper to taste

Instructions

  • Brown the sausage: In a large skillet, brown the sausage over medium heat, breaking it up with a spoon. Remove the sausage from the skillet and set aside.
  • Sauté vegetables: In the same skillet, sauté the onion, carrots, and celery until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  • Combine ingredients: Return the sausage to the skillet. Add the chicken broth, diced tomatoes, white wine, and salt and pepper to taste.
  • Vacuum seal: Place the mixture in a vacuum sealer bag and seal.
  • Sous vide: Set your sous vide cooker to 165°F (74°C). Place the sealed bag in the water bath and cook for 1-2 hours, or until the vegetables are tender.
  • Finish: Remove the soup from the water bath and stir in the heavy cream and goat cheese. Serve immediately.
  • Tips:
  • For a spicier soup, use spicy Italian sausage or add red pepper flakes.
  • You can also use a zip-top bag and displace the air with a water displacement method.
  • Serve with crusty bread or a side salad.
