Instructions
Brown the sausage: In a large skillet, brown the sausage over medium heat, breaking it up with a spoon. Remove the sausage from the skillet and set aside.
Sauté vegetables: In the same skillet, sauté the onion, carrots, and celery until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
Combine ingredients: Return the sausage to the skillet. Add the chicken broth, diced tomatoes, white wine, and salt and pepper to taste.
Vacuum seal: Place the mixture in a vacuum sealer bag and seal.
Sous vide: Set your sous vide cooker to 165°F (74°C). Place the sealed bag in the water bath and cook for 1-2 hours, or until the vegetables are tender.
Finish: Remove the soup from the water bath and stir in the heavy cream and goat cheese. Serve immediately.
Tips:
For a spicier soup, use spicy Italian sausage or add red pepper flakes.
You can also use a zip-top bag and displace the air with a water displacement method.
