Slow Cooker Lemon Garlic Salmon

Ingredients

  • 1.5 pounds salmon fillets
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tablespoon dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Prep the salmon: Place the salmon fillets in a slow cooker.
  • Make the marinade: In a small bowl, whisk together the olive oil, garlic, lemon zest and juice, dill, salt, and pepper.
  • Pour marinade: Pour the marinade over the salmon fillets.
  • Cook: Cook on low for 4-6 hours, or until the salmon is flaky and cooked through.
  • Serve: Serve with your favorite sides, such as roasted vegetables or rice.
  • Tips:
  • For a more flavorful salmon, add a tablespoon of honey or maple syrup to the marinade.
  • Serve with a side of lemon wedges for squeezing over the salmon.
  • For a healthier option, replace the olive oil with a lighter oil like avocado oil.
