Melody's Mediterranean Lamb Chops

Ingredients

  • 8 lamb chops about 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat grill: Preheat your grill to medium-high heat.
  • Season lamb chops: In a small bowl, combine the olive oil, cumin, oregano, salt, and pepper. Brush the lamb chops with the mixture on both sides.
  • Grill lamb chops: Place the lamb chops on the preheated grill and cook for 5-7 minutes per side, or until desired level of doneness.
  • Make the sauce: In a small bowl, whisk together the lemon juice, mint, and parsley.
  • Serve: Serve the lamb chops immediately with the lemon-herb sauce.
  • Tips:
  • For a more flavorful sauce, add a clove of minced garlic to the lemon-herb mixture.
  • Serve with a side of couscous or roasted vegetables.
  • You can also pan-sear the lamb chops in a skillet if you don't have a grill.
