Melody's Lemon Garlic Roasted Chicken

Ingredients

  • 1 whole chicken 3-4 pounds
  • 1 lemon cut into wedges
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven: Preheat your oven to 425°F (220°C).
  • Prepare chicken: Remove the giblets from the chicken cavity and pat it dry with paper towels.
  • Stuff cavity: Stuff the lemon wedges and minced garlic into the chicken cavity.
  • Rub with oil and seasonings: In a small bowl, combine the olive oil, rosemary, salt, and pepper. Rub the mixture all over the chicken.
  • Roast chicken: Place the chicken in a roasting pan and roast in the preheated oven for 45-50 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  • Rest chicken: Let the chicken rest for 10 minutes before carving and serving.
  • Tips:
  • For extra flavor, add a few sprigs of fresh thyme or rosemary to the roasting pan.
  • Serve with roasted vegetables or a side of mashed potatoes.
