Lemon Bars

Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter cut into cubes

For the lemon filling:

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt

Instructions

Make the crust:

  • In a large bowl, combine the flour, powdered sugar, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Press the crumbs into the bottom of a 9x13 inch baking pan.
  • Bake in a preheated 350°F oven for 15-20 minutes, or until golden brown. Let cool completely.

Make the lemon filling:

  • In a large bowl, whisk together the eggs, sugar, flour, lemon juice, lemon zest, and salt until smooth.
  • Pour the lemon filling over the cooled crust.

Bake the bars:

  • Bake in a preheated 350°F oven for 25-30 minutes, or until the filling is set.
  • Let cool completely before cutting into squares.
  • Enjoy!
