Lemon Bars
Ingredients
For the crust:

all-purpose flour

powdered sugar

cold unsalted butter
cut into cubes
For the lemon filling:
3
large eggs
1
cup
granulated sugar
1/4
cup
all-purpose flour
1/4
cup
lemon juice
1
tablespoon
lemon zest
1/4
teaspoon
salt
Instructions
Make the crust:
In a large bowl, combine the flour, powdered sugar, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Press the crumbs into the bottom of a 9x13 inch baking pan.
Bake in a preheated 350°F oven for 15-20 minutes, or until golden brown. Let cool completely.
Make the lemon filling:
In a large bowl, whisk together the eggs, sugar, flour, lemon juice, lemon zest, and salt until smooth.
Pour the lemon filling over the cooled crust.
Bake the bars:
Bake in a preheated 350°F oven for 25-30 minutes, or until the filling is set.
Let cool completely before cutting into squares.
