  • 1 whole chicken cut into 8 pieces
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • Prepare the marinade: In a mixing bowl, combine lemon juice, olive oil, garlic, thyme, oregano, salt, and pepper.
  • Marinate the chicken: Place the chicken pieces in the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to overnight.
  • Preheat the grill: Preheat your grill to medium-high heat (around 375-400°F).
  • Skewer the chicken (optional): If desired, thread the chicken pieces onto skewers.
  • Grill the chicken: Lightly oil the grill grates. Place the chicken pieces or skewers on the grill, making sure not to overcrowd. Grill for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  • Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes before serving. Serve hot with your favorite sides.
  • Tips:
  • For a smoky flavor, use a charcoal grill.
  • If you don't have a grill, you can use a stovetop grill pan or broil the chicken in the oven.
  • For extra flavor, brush the chicken with leftover marinade during the last few minutes of grilling.
