Elegant Chocolate Soufflé

Instructions
Preheat oven: Preheat your oven to 400°F (200°C).
Prepare soufflé dishes: Butter four 6-ounce soufflé dishes and dust with cocoa powder.
Whisk egg yolks: In a large bowl, whisk together egg yolks and sugar until light and fluffy.
Add dry ingredients: Gradually whisk in the flour, cocoa powder, milk, melted butter, and salt.
Beat egg whites: In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
Fold egg whites: Gently fold egg whites into the chocolate mixture until just combined.
Divide batter: Divide the batter evenly among the prepared soufflé dishes.
Bake: Bake in the preheated oven for 20-25 minutes, or until puffed and set.
Serve immediately: Serve the soufflés immediately while still hot and puffy.
