Easy Oriental Fried Rice

Ingredients

  • 2 to 4 cups cooked rice
  • 2 slices bacon chopped
  • 1/2 cup low-fat ham diced
  • 1 cup carrots diced
  • 1/2 cup red pepper diced
  • 1/2 cup green onion chopped
  • 1 cup frozen green peas
  • 1/2 teaspoon dried ginger
  • 1/3 cup low-salt soy sauce
  • Salt and pepper to taste

Instructions

  • Fry bacon in a large skillet or wok until crisp. Drain off all but 1 tablespoon of fat.
  • Add diced ham and carrots; stir-fry for about 2 minutes.
  • Add red pepper and green onions; toss or stir-fry until vegetables are cooked.
  • Stir in green peas, cooked rice, dried ginger, soy sauce, salt, and pepper.
  • Stir to heat everything well; cover and let stand for about 5 minutes.
  • Serving Suggestion: Serving size depends on the amount of rice used.
