Fry bacon in a large skillet or wok until crisp. Drain off all but 1 tablespoon of fat.
Add diced ham and carrots; stir-fry for about 2 minutes.
Add red pepper and green onions; toss or stir-fry until vegetables are cooked.
Stir in green peas, cooked rice, dried ginger, soy sauce, salt, and pepper.
Stir to heat everything well; cover and let stand for about 5 minutes.
