Crispy Beef Tostadas
Ingredients

15 ounces black beans, rinsed and drained

15 ounces diced tomatoes

corn tortillas
Vegetable oil
for frying
Toppings: shredded cheese
chopped lettuce, diced tomatoes, avocado, sour cream, salsa
Instructions
Cook ground beef: In a large skillet over medium heat, cook ground beef until browned. Drain off any excess grease.
Sauté vegetables: Add the onion and garlic to the skillet and sauté until softened.
Add spices: Stir in the chili powder, cumin, salt, and pepper.
Simmer: Add the black beans and diced tomatoes to the skillet. Simmer for 5-10 minutes, or until the flavors have combined.
Fry tortillas: Heat vegetable oil in a large skillet over medium-high heat. Fry the corn tortillas for 1-2 minutes per side, or until crispy.
Assemble tostadas: Place a crispy tortilla on a plate. Top with a generous amount of the beef mixture. Add your desired toppings.
Serve: Serve immediately and enjoy!
