Crispy Beef Tostadas

Ingredients

  • 1 pound ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 can 15 ounces diced tomatoes
  • 8 corn tortillas
  • Vegetable oil for frying
  • Toppings: shredded cheese chopped lettuce, diced tomatoes, avocado, sour cream, salsa

Instructions

  • Cook ground beef: In a large skillet over medium heat, cook ground beef until browned. Drain off any excess grease.
  • Sauté vegetables: Add the onion and garlic to the skillet and sauté until softened.
  • Add spices: Stir in the chili powder, cumin, salt, and pepper.
  • Simmer: Add the black beans and diced tomatoes to the skillet. Simmer for 5-10 minutes, or until the flavors have combined.
  • Fry tortillas: Heat vegetable oil in a large skillet over medium-high heat. Fry the corn tortillas for 1-2 minutes per side, or until crispy.
  • Assemble tostadas: Place a crispy tortilla on a plate. Top with a generous amount of the beef mixture. Add your desired toppings.
  • Serve: Serve immediately and enjoy!
