Creamy Tomato Soup
Ingredients

tablespoon
olive oil
1 onion
chopped
2 cloves garlic
minced
2 cups chopped ripe tomatoes
or 1 can whole peeled tomatoes
4 cups vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Sauté vegetables: Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add tomatoes: Stir in chopped tomatoes and cook for 5 minutes, or until tomatoes break down.
Simmer and blend: Pour in vegetable broth and bring to a simmer. Let simmer for 20 minutes. Blend until smooth.
Season and finish: Season with salt, pepper, and sugar (if needed). Stir in heavy cream. Simmer for 5 minutes.
Serve: Ladle soup into bowls and garnish with basil leaves. Serve with crusty bread or a grilled cheese sandwich.
