Creamy Tomato Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups chopped ripe tomatoes or 1 can whole peeled tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Sauté vegetables: Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add tomatoes: Stir in chopped tomatoes and cook for 5 minutes, or until tomatoes break down.
  • Simmer and blend: Pour in vegetable broth and bring to a simmer. Let simmer for 20 minutes. Blend until smooth.
  • Season and finish: Season with salt, pepper, and sugar (if needed). Stir in heavy cream. Simmer for 5 minutes.
  • Serve: Ladle soup into bowls and garnish with basil leaves. Serve with crusty bread or a grilled cheese sandwich.
