Creamy Roasted Garlic Mashed Potatoes

Ingredients

  • 2 pounds russet potatoes peeled and quartered
  • 1 head garlic cloves separated and peeled
  • 1/4 cup butter softened
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven: Preheat oven to 400°F (200°C).
  • Roast potatoes: Place potatoes and garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 45 minutes, or until potatoes are tender.
  • Mash potatoes: Mash roasted potatoes and garlic cloves together.
  • Add dairy: Stir in butter, milk, and heavy cream. Mash until smooth and creamy.
  • Season: Season with salt and pepper to taste.
  • Tips:
  • For a richer flavor, use a combination of russet and Yukon Gold potatoes.
  • For a creamier texture, use heavy cream instead of milk.
  • To add a touch of sweetness, add a teaspoon of honey or maple syrup.
