Chicken Pot Pie

This classic comfort food is a hearty and satisfying meal. A flaky pie crust encases a creamy filling of tender chicken, vegetables, and rich broth.

Ingredients

  • 1 cooked chicken shredded
  • 1 cup carrots chopped
  • 1 cup potatoes chopped
  • 1/2 cup peas
  • 1 onion chopped
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/3 cup all-purpose flour
  • 2 tablespoons butter
  • 1 pie crust
  • Salt and pepper to taste
  • Thyme dried

Instructions

  • Prepare Vegetables: Sauté onions in butter until translucent. Add carrots and potatoes; cook until softened. Stir in peas.
  • Make Filling: Combine vegetables with flour, chicken broth, and milk. Bring to a simmer, stirring until thickened. Add shredded chicken and seasonings.
  • Assemble Pie: Place pie crust in a dish. Pour filling into crust. Cover with second crust, crimping edges. Cut slits in top crust.
  • Bake at 425°F (220°C) for 30-35 minutes, or until golden brown. Let cool slightly before serving.
