Campbell's Cheese and Broccoli Potato Topper

Ingredients

  • 1 10 3/4 oz can Campbell's New Cheddar Cheese Soup
  • 2 tablespoons sour cream or yogurt
  • 1/2 teaspoon Dijon mustard
  • 1 cup cooked broccoli florets
  • 4 hot baked potatoes split

Instructions

  • Preheat oven: If baking potatoes, preheat oven to 400°F (200°C).
  • Prepare potatoes: Pierce potatoes with a fork and bake for 1 hour, or microwave on high for 10-12 minutes or until fork tender.
  • Make the topping: In a 1 1/2-quart saucepan, combine Campbell's New Cheddar Cheese Soup, sour cream, and Dijon mustard.
  • Add broccoli: Add cooked broccoli florets to the saucepan and heat through, stirring occasionally.
  • Serve: Spoon the cheese and broccoli mixture over the split potatoes. Garnish with chopped sweet red pepper if desired.
