Black Bean Tacos

Equipment

  • Large skillet
  • Wooden spoon or spatula
  • Medium-sized bowl

Ingredients

  • 1 can 15 oz black beans, drained and rinsed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Your choice of taco toppings e.g., diced tomatoes, shredded lettuce, sliced avocado, fresh cilantro, lime wedges, salsa, shredded cheese

Instructions

  • Sauté onion and garlic: Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened, about 3-4 minutes.
  • Add spices and beans: Add garlic and cook for 1 minute. Stir in cumin, chili powder, salt, and pepper. Add black beans and mash some with a spoon. Cook for 5 minutes, or until heated through.
  • Warm tortillas: Heat tortillas in a dry skillet or in a preheated oven at 350°F for 10 minutes.
  • Assemble tacos: Fill warm tortillas with black bean mixture and top with desired toppings.
