Melody's Keto Beef Stroganoff

Ingredients

  • 1 pound lean ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1/4 cup mushrooms sliced (optional)
  • 1/2 cup cauliflower rice

Instructions

  • Cook beef: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Sauté onion and garlic: Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Add seasonings: Stir in the Worcestershire sauce, thyme, salt, and pepper.
  • Simmer broth and cream: Pour in the beef broth and heavy cream. Bring to a simmer and cook for 10 minutes, or until the sauce thickens.
  • Stir in sour cream, cheese, and mustard: Reduce heat to low and stir in the sour cream, Parmesan cheese, and Dijon mustard.
  • Add mushrooms (optional): If using, add the sliced mushrooms to the skillet and cook for 2-3 minutes, or until tender.
  • Serve with cauliflower rice: Serve the beef stroganoff over cauliflower rice.
  • Tips:
  • For a richer flavor, use bone broth instead of beef broth.
  • Serve with a side of steamed broccoli or asparagus.
