Baked Parmesan Crusted Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional Red pepper flakes, lemon zest, balsamic glaze

Instructions

  • Preheat oven: Preheat oven to 400°F (200°C).
  • Prepare chicken: Pat chicken breasts dry with paper towels.
  • Make coating: In a shallow bowl, combine Parmesan cheese, almond flour, garlic powder, onion powder, Italian herbs, salt, and pepper.
  • Coat chicken: Coat chicken breasts in olive oil, then dip in Parmesan mixture.
  • Bake: Place chicken on a parchment-lined baking sheet and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
  • Optional: Broil for a few minutes for extra crispiness.
  • Serve: Let chicken rest for a few minutes before serving. Top with balsamic glaze and lemon zest, if desired.
